  • salt&black pepper.
  • cornfloura.k.a. corn starch: may be replaced with plain flour (all-purpose flour).
  • neutral oil: like sunflower, vegetable or rapeseed oil.
  • massaman curry paste:we used ready-made massaman paste from Sainsbury’s on this occasion, but you can make your own paste by following this greathomemade massaman curry paste recipe. Note that curry pastes are not all created equal, and you may need more or less to allow the flavours to shine through without overwhelming.
  • dark brown sugar:optional, but highly recommended.
  • full-fat coconut milk:from a tin.
  • brown onion:may be replaced with red onion or even shallots.
  • baby potatoes: use any waxy potatoes that will keep shape after long cooking. Larger ones should be halved.
  • salted roasted peanuts:we use half of the peanuts in the curry itself, and half for garnish.
  • beef stock:or homemade beef broth.

Step-By-Step Method

1. In a large bowl, toss the diced beef with salt, black pepper and cornflour to coat well.

2. Heat the oil in a large frying pan over medium-high heat (you may use the bowl of your slow cooker if it is suitable for cooking on the hobs). You may need to do this in batches.

3. Add the beef and fry for 5-6 minutes, until browned all over. Scoop the beef into the bowl of your slow cooker, but reserve the pan with all the brown bits stuck to the bottom.

4. Reduce the heat to medium heat. To the same pan, add brown sugar, massaman curry paste, mix well and cook for 1 minute.

5. Pour in the stock and scrape the pan with a spatula to collect all the stuck-on brown bits. Then pour the mixture over the beef into a slow cooker bowl.

6. Add half of the peanuts, onion wedges, baby potatoes and coconut milk. Mix well to combine.

7. Cook the massaman beef curry on high for 5-6 hours or on low for 8-9 hours (cooking time will depend on the size of your beef cubes as well as the type of slow cooker).

8. When the curry is cooked, skim a layer of fat floating on top with a spoon. Serve with plenty of rice garnished with a lime wedge, coriander, red chillies and the remaining peanuts.
